Cheap, cheerful and relatively healthy.


If you're like me and mostly late for work in the mornings then you'd appreciate this quick and easy breakfast recipe. I spotted this on Kayla Itsines website (here) and I had to try it out for myself, being the huge egg lover I am.   
Method: Pre heat the oven to 180c, and prepare a muffin tray with oil (don't use muffin cups like I did!)
Beat together the eggs, milk and flour, then add the courgette and cheese until all combined. Then pour into the muffin holes right to the top and bake for 25-30 minutes.

Then when you're rushed in the mornings just heat in the microwave for 30 seconds and enjoy! (I had mine with a teeny bit of ketchup)
