Why brunch out when you can brunch in...

First let me bore you, as you may or may not know I am 24 and work part time in retail. Working 9 - 2pm 5 days a week... Recently i've been doing tonnes of over time for holiday spending money. I've worked 12 days in a row and today is my day off, i've been looking forward to this since the first day of the twelve days. I've missed doing a lot of things but one of them is brunching, so I planned ahead and went food shopping last night. 


It's been 55 days that I've cut out my four favourite things, bread, potatoes, rice and pasta. So i've been making alternatives... Here i've made a courgette fritter to go alongside my spicy beans, portobello mushroom, avocado and tomatoes. This right here is one of my favourite brunches, why would I need to go out for brunch when I can make a tasty brunch like this... eh! (nah but I mostly don't brunch out cos I'm broke all the time)

If you're like me and mostly late for work in the mornings then you'd appreciate this quick and easy breakfast recipe. I spotted this on Kayla Itsines website (here) and I had to try it out for myself, being the huge egg lover I am.   
Method: Pre heat the oven to 180c, and prepare a muffin tray with oil (don't use muffin cups like I did!)
Beat together the eggs, milk and flour, then add the courgette and cheese until all combined. Then pour into the muffin holes right to the top and bake for 25-30 minutes.

Then when you're rushed in the mornings just heat in the microwave for 30 seconds and enjoy! (I had mine with a teeny bit of ketchup)

This easy delicious brunch is my take on the 'Leon Egg Pot' after seeing the Debriefs take on it I had to try my own. Also try a splash of Lea & Perrins Worcester Sauce! 

Basically this is a microwave meal, put the tinned toms or chosen sauce and chilli powder in a bowl and microwave for 1 minute (wrap the bowl in clingfilm btw!). Then add the beans, chorizo and the already cooked mushrooms then microwave for another minute then crack an egg in in the middle and microwave for a final minute and viola! Top with chopped paisley or basil, ever or. 

Enjoy (I'll probably be eating this a lot..)

My favourite brunches of 2015

As most of you guys know I'm a huge brunch lover (brunch/eggs same same) I was strolling through my Instagram yesterday admiring all the pretty brunches I've been lucky enough to enjoy this past year. 

Most of them being homemade and sometimes I blow my own trumpet but I do make a mean brunch. The others cooked by my boyfriend and others by cafes. 

1. Pancakes made by Rakesh. 2. Blood orange and waffle at 8 Hoxton Square. 3. Eggs on toast in bed. 4. Christmas day breakfast made by Rakesh. 5. Pancakes and toppings made by my brother and his girlfriend. 6. The most tastiest brunch in Budapest. 7. Poached eggs. 8. Baked eggs. 9. Jam toast. 10. First time avo on toast. 11. Hangover full breakfast by Rakesh. 12. Brunch at Milk. 13. Mother's day. 14. Simple shroom and spinach omelette. 15. Crystal Palace Market brunch (so good I went a few times).

This is probably why I didn't lose much weight last year but I still plan to enjoy brunches in 2016. My to visit list is also ever growing so hit me up for brunch spots in London if you're visiting!
